Loving Lately- January

This month's roundup of the things I am loving lately: mexican rice, stainless steel straws, the Atlanta Monster podcast, and Mat Kearney's newest releases.

Hi!! Happy New Year!!

It’s been so long since I wrote a blog post….between the holidays and traveling I’ve been totally wiped out. You know how the longer you avoid doing something the harder it is to come back to it? That’s how I have felt about blogging.

I would think about things I wanted to share but then the thought of sitting down to write them felt so overwhelming.

After some time off, I’m feeling better and more energized to share the things I care about and just forget the rest.

In case you didn’t know, I started a food/cooking account on Instagram. I love to cook and share recipes and IG felt like the best platform to do this. As of right now, I’m not planning to change my blog drastically but you may see some more food posts on here this year. If you want to follow the account you can find me at @thatplantbasedgrl.

Okay, enough talk….let’s talk about the things I love!

  1. Recipe to try: Mexican Rice

I made this rice the other night and it did not disappoint. I served mine with black beans, sauteed bell peppers and onions, pico de gallo, and cilantro-lime avocado dressing—so delicious!

2. Thing to buy: These Straws

I’m obsessed and they come with a cleaning tool!

3. Podcast to listen to:  Atlanta Monster

This podcast investigates the Atlanta Child Murders of the early 1980’s.  This podcast is being released over the course of 8 weeks, the first two have been great so far. If you are a lover of true crime…this will be a great listen.

4. Album to blare in your car: Mat Kearney

He has released 4 songs this year and I am obsessed with all of them. I’m not sure when the whole album will be released but so far I am loving these songs. They are available for streaming on Spotify

Hi honey, I loved this…#1 I’m so proud of you that you have stuck to your guns on your eating, I start something and fall by the wayside, thanks for showing me it can be done….I love that you want to eat healthy and that you love to cook…..I have a question about steel cut oats….I have never tried them is there a big difference than regular oats….that breakfast looks deelish. Love you sweet girl, have a great week ❤️❌⭕️

    1. Thank you! The difference between steel cut oats and rolled or quick oats is texture and cooking time. Rolled/quick oats have a more smooth texture while steel cut oats have more of a “chew” to them. Also, steel cut oats take longer to cook. I like both, just depends on my mood what I decide to choose that day!
